In this easy guide from Easy Pie Recipes, we’ll show you how to make the perfect Phat Si-Io recipe at home with ingredients you can find in most supermarkets.

What Is Phat Si-Io?
Phat Si-Io (also spelled Pad See Ew) is a popular Thai street food dish made with wide rice noodles, dark soy sauce, Chinese broccoli (gai lan), egg, and a choice of protein. The name roughly translates to “stir-fried with soy sauce,” and that’s exactly what gives this dish its deep umami flavour.
It’s known for its slightly charred wok flavour – a key element of authentic Thai stir-frying known as wok hei.
Easy Phat Si-Io Recipe (Serves 2)
🥢 Ingredients
- 200g wide rice noodles (fresh or soaked dried noodles)
- 2 tbsp dark soy sauce
- 1 tbsp light soy sauce
- 1 tsp oyster sauce
- 1 tsp sugar
- 2 tbsp vegetable oil
- 2 cloves garlic, finely chopped
- 150g chicken breast or tofu, thinly sliced
- 2 eggs
- 100g Chinese broccoli (gai lan) or regular broccoli, chopped
- Optional: white pepper or chilli flakes for garnish
🍳 Instructions
- Prepare the noodles
If using dried noodles, soak them in warm water until soft, then drain. If using fresh, separate gently with your hands. - Mix the sauce
In a small bowl, combine dark soy, light soy, oyster sauce, and sugar. Set aside. - Stir-fry the garlic and protein
Heat 1 tbsp oil in a wok over high heat. Add garlic, then chicken or tofu. Stir-fry until nearly cooked. - Add the eggs
Push the meat to one side. Add the eggs and scramble lightly before mixing everything together. - Toss in the noodles
Add the noodles and pour the sauce over them. Stir quickly to coat and allow some parts to char slightly. - Add the greens
Toss in the Chinese broccoli and cook for 1–2 minutes until just tender. - Serve hot
Plate your dish and top with a pinch of white pepper or chilli flakes if desired.
Tips for Authentic Flavour
- Use a very hot wok to achieve the signature char.
- Don’t overcrowd the pan – cook in batches if needed.
- Dark soy sauce is essential for the deep colour and flavour. Don’t substitute with regular soy.
